Lotus Root Soup

A mishmash of everyone's Cantonese recipes.
Ingredients: - 1lb Pork spare ribs
- Ginger
- Jujubes
- Garlic cloves
- 0.5-1lb Lotus root
- 3 quarts water
Blanche the pork ribs and toss the first batch of water out. Slice up some ginger, peel some garlic cloves, and get that 12 cups of water boiling. At the very last minute, slice up the lotus root. Shove it all in the Instant Pot and press the "Soup" button. "Soup" it 3 times, salt to taste, and it should have the flavor you want.
